【Matcha Recipe#5】Matcha Tiramisu – New tiramisu flavour has the answer to everything

Matcha Tiramisu

Matcha Tiramisu with oat cookies has an interesting new texture and taste compared to the traditional tiramisu with ladyfingers and dark rum. A must try for everyone! For the real matcha lovers, we highly recommend to sprinkle the top layer of this tiramisu with some extra matcha. This is not only fantastic for your eye, but also for an ultimate taste.

Ingredients (⌀11 cm, 2 persons)

● Matcha (cooking-grade): 6 g go to shop
● Cream cheese: 100 g
● White granulated sugar: 25 g
● Vanilla extract: 1/4 teaspoon
● Water (60 °C): 118 mL
● Whipped cream (35% fat): 60 g
● Oat cookies: 7 or 8 pieces

Method

STEP 1
Before whipping the cream, place a bowl in the fridge.

STEP 2
In another bowl, combine the cream cheese with small amounts of white granulated sugar each time by using a hand mixer.

STEP 3
Mix the cream cheese mixture (step 2) with the vanilla extract. Set this bowl aside.

STEP 4
Dissolve matcha powder in water (60 °C) by using a bamboo whisk. Make sure that all powder is dissolved.

STEP 5
In the cooled down bowl (step 1), whip the cream stiff.

STEP 6
Gently mix step 3 + step 5.

STEP 7
Break the oat cookies into smaller pieces and soak in matcha (step 4) until soft.

STEP 8
Cover your mold with parchment paper.

STEP 9
For the bottom layer, completely cover the bottom of your mold with soaked oat cookies (step 7), sprinkle with a few drops of matcha (step 4), and finish with the cream mixture (step 6).

STEP 10
Repeat step 9 at least twice.

STEP 11
Store the matcha tiramisu (step 10) in the fridge for overnight.

STEP 12
After overnight, bring the matcha tiramisu (step 11) to room temperature.

STEP 13
Finally, remove your mold from your matcha tiramisu (step 12).

STEP 14
For the top layer, sprinkle the matcha tiramisu (step 13) with some extra matcha powder.
